I made this quick for dinner the other night with my leftover lentil pasta and had to share! It took about 10 minutes to make, but I would say it’d take about 20 minutes if you need to boil the pasta. Perfect dinner if you are short on time!

You will need:

  • 1 Box of Pasta (I prefer lentil/chickpea/black bean/edamame for higher protein content)

  • 2 Cups of Spinach

  • 1/2 Small Yellow Onion

  • 1 Tsp of Oil

  • Pesto

  • Lemon

  • Crushed Red Pepper

  • Salt to Taste

  • Diary Free Parmesan

Instructions:

  1. Boil pasta if you don’t have any leftover. Drain and set aside.

  2. Saute onions and spinach in oil. Allow spinach to fully wilt before adding the pasta.

  3. Add in pesto to your preferred amount.

  4. Add crushed red pepper flakes and salt.

  5. Plate and add Parmesan on top!
