Lentil Pasta with Spinach & Pesto

I made this quick for dinner the other night with my leftover lentil pasta and had to share! It took about 10 minutes to make, but I would say it’d take about 20 minutes if you need to boil the pasta. Perfect dinner if you are short on time!
You will need:
- 1 Box of Pasta (I prefer lentil/chickpea/black bean/edamame for higher protein content) 
- 2 Cups of Spinach 
- 1/2 Small Yellow Onion 
- 1 Tsp of Oil 
- Pesto 
- Lemon 
- Crushed Red Pepper 
- Salt to Taste 
- Diary Free Parmesan 
Instructions:
- Boil pasta if you don’t have any leftover. Drain and set aside. 
- Saute onions and spinach in oil. Allow spinach to fully wilt before adding the pasta. 
- Add in pesto to your preferred amount. 
- Add crushed red pepper flakes and salt. 
- Plate and add Parmesan on top!
