Chickpea "Tuna" Salad


Super delicious and super easy! This recipe is great with a slice of toasted bread, GG crackers, on a wrap, over salad or even by itself! It only takes about 10 minutes to make.

Ingredients:

1 Can of Chickpeas

1 Small Onion (yellow or purple work)

1 Small Green Pepper or 1 Celery Stalk

1-2 Lemons

2 tsp Tahini

4 tsp Dijon Mustard

Salt

Pepper

Garlic

Instructions:

1. In a medium sized bowl, use a fork to mash the drained can of chickpeas. Some pieces will remain whole, you don't have to get them all.

2. Dice the small onion and green pepper or celery stalk (or both if you like an extra crunch to your salad) and add it to the mashed chickpeas.

3. Add in the tahini, dijon mustard and squeeze one lemon into the contents in the bowl. Mix everything together. Depending on how you like your chickpea tuna salad, you may want to add in the other lemon to make it less dry. I sometimes add in more mustard or tahini here, depending on how I'm feeling that day.

4. Add salt, pepper and garlic to taste and enjoy!
