Orzo Chickpea Marinara

Ingredients:

  • 1 small onion

  • 1 tsp minced garlic

  • 1 cup of chopped spinach

  • 1/2 box orzo pasta

  • 1/2 can chickpeas

  • 3/4 jar of marinara sauce

  • olive oil

  • nutritional yeast

  • crushed red pepper flakes

  • hemp seeds

  • shiitake mushrooms


Directions:

  1. In a large sauce pan, heat up a drizzle of olive oil and sauté diced onion and minced garlic.

  2. In a medium pot, bring water to a boil for orzo. Cook to your preference.

  3. When onions become translucent in the large sauce pan, add in chopped spinach leaves and allow to cook through.

  4. Drain your orzo, but save 3 tablespoons of pasta water. Add the orzo and pasta water into the large sauce pan.

  5. Add chickpeas and mushrooms into the pan and bring to a simmer.

  6. Add in A LOT of nutritional yeast and sprinkle in a tablespoon of hemp seeds. Your sauce will become a pinkish red and will have a creamy consistency.

  7. Serve and add crushed red pepper to taste!
