Orzo Chickpea Marinara

Ingredients:
- 1 small onion 
- 1 tsp minced garlic 
- 1 cup of chopped spinach 
- 1/2 box orzo pasta 
- 1/2 can chickpeas 
- 3/4 jar of marinara sauce 
- olive oil 
- nutritional yeast 
- crushed red pepper flakes 
- hemp seeds 
- shiitake mushrooms 
Directions:
- In a large sauce pan, heat up a drizzle of olive oil and sauté diced onion and minced garlic. 
- In a medium pot, bring water to a boil for orzo. Cook to your preference. 
- When onions become translucent in the large sauce pan, add in chopped spinach leaves and allow to cook through. 
- Drain your orzo, but save 3 tablespoons of pasta water. Add the orzo and pasta water into the large sauce pan. 
- Add chickpeas and mushrooms into the pan and bring to a simmer. 
- Add in A LOT of nutritional yeast and sprinkle in a tablespoon of hemp seeds. Your sauce will become a pinkish red and will have a creamy consistency. 
- Serve and add crushed red pepper to taste!
