Vegan Tofu Taco "Meat"

I am a BIG fan of Mexican food, so good tacos are always a must for me. I do love a good veggie taco, but sometimes it's good to change it up and go with tofu. This recipe is quick and easy can be used for tacos, burritos or even a burrito bowl.


Ingredients:

  • 1 Block of Extra Firm Tofu

  • 1 Packet of Siete Mild Taco Seasoning

  • 1/3 Cup of Water

  • 1/3 Cup of Salsa

  • 1/2 Can of Black Beans

  • 1/2 Small Yellow Onion

  • 1 Fresh Jalapeño (optional)

Extras:

  • Diced Tomatoes

  • Violife Dairy Free Cheddar Cheese

  • Lemon Pepper Right Rice

  • 1 Medium Avocado

  • Corn

Instructions:

  1. Drain the extra firm tofu and place it in a large pan. The tofu does not need to be pressed. On a low flame, start to break the tofu up into small pieces.

  2. Add the beans, chopped onions and jalapeños into the pan and mix.

  3. Pour in water, salsa and taco seasoning and continue mixing until fully blended into the tofu.

  4. If you are using rice, prepare in a separate pan and set aside. Right Rice calls for boiling the necessary amount of water, adding in the rice and allowing it to sit off the flame until the water is fully absorbed. Right Rice is super quick and easy and is a great way to get in more veggies and protein.

  5. Use whatever extras/sides you want to assemble your taco, burrito or burrito bowl, pair with your favorite hot sauce and enjoy!

Serves about 4-6 people.
